This amazing concoction is the brainchild of Tessemae's own Brittany Hartford in Annapolis, MD. It was a huge hit at our Ras Vin launch last month. People just could not get enough! This is a great side salad or, with a little chicken, a great lunch.
What you need
1 bunch kale (about 12 ounces)
½ cup Tessemae’s Raspberry Vinaigrette
½ cup pecans
6 ounces fresh raspberries
4 ounces fresh goat cheese, optional
What to do
Tear the kale off of the stems and into bite sized pieces. Wash and thoroughly dry it. (If you leave any water, it will dilute the dressing!) Toss the kale and dressing together and let sit for about 5 minutes. Toss in the pecans and raspberries. Serve topped with fresh goat cheese.
