Is it a guacamole? Is it salsa? Is it... so good that we don't care? Yup. This time of year there is nothing like fresh, sweet white corn!
What you need
2 ears white corn
1 avocado, diced into small pieces
1 ripe tomato, deiced into small pieces
1 bunch scallions, thinly sliced
¼ cup Tessemae’s Southwest Ranch
3 tablespoons fresh lime juice
tortilla chips for dipping
What to do
Stand the corn on end in a shallow bowl and scrape off the kernels by cutting downward with a sharp knife. Combine the corn, avocado, tomato, scallions, Southwest Ranch and lime juice. Season with salt and serve with chips.
