Wow, we are so happy to share this Green Goddess Quinoa Cobb Salad recipe from Sweet Treats and More! (Quinoa and our Green Goddess are a match made in heaven.) We are drooling over all of the beautiful recipes on Kristy's blog!
1 cup quinoa, rinsed2 cups chicken broth ( or use 3 cups already cooked quinoa)1 cup cooked and shredded chicken1 large avocado, peeled, pitted, and diced2 roma tomatoes, diced2 hard boiled eggs, peeled and diced1/4 cup red onion, diced6 slices cooked bacon, chopped

- Bring two cups of chicken broth and quinoa to a boil. Reduce to simmer, cover and let simmer for 10-15 minutes until liquid is absorbed. Remove from heat and fluff with a fork, set aside (chill if you want a cold salad)
- Place quinoa in a large shallow salad bowl.
- Assemble the toppings on top of the quinoa in rows. Drizzle with Tessemae's Green Goddess Dressing, season with salt and pepper, and toss together.
