Snack time is crazy important, at least it is in our house. Both of the girls take after their mama and tend to get very hangry (hungry + angry) if not fed about every 3 hours. They would absolutely not make it from lunch until dinner every day without a good filling snack in between.
Occasionally — yea right, like almost always — I reach for the gold fish and some fruit for snack time. On rare days that I actually plan ahead, I like to make some kind of toast for snack time. It literally only takes a few minutes and there are so many options you can make from sweet to savory.
I make tomato toasts, peanut butter & honey toast, cheese toast, avocado toast and on bad days we do sugar & cinnamon toast. I love that I can just use whatever I have on hand and whatever fits our moods. The girls and I will always share these kinds of snacks and it’s nice that I can make something we all enjoy!
These Tomato & Goat Cheese Toasts are one of my personal favorites during the summer months when tomatoes are at their peak. The tomatoes are tossed in Tessemae’s Lemon Garlic Dressing and a little salt and pepper. Tessemae’s is a wonderful company that promises to be all natural and healthy.
Most of their products are gluten free, vegan and paleo! And this Lemon Garlic Dressing is also sugar free and dairy free! Because their dressings are preservative free, they can solidify when stored in the fridge after opening, but with a little shaking, they’re ready to go again.
If you don’t like goat cheese (and if you don’t, I’m not sure we can be friends), you can always swap it out for hummus or even mashed avocado. Both make excellent substitutes for the goat cheese in this recipe. I hope the kids (and you) enjoy this delicious snack!
