Easiest Avocado Chopped Cobb
We love Cobb salads because they can be enjoyed for any meal of the day and are a great way to use up leftover chicken! Not to mention, the beautifully presented rows of bright, colorful veggies and proteins that make it the perfect nutrient dense dish!
Makes 4 servings
WHAT YOU NEED
- 8 slices bacon
- 1 Rotisserie Chicken
- 4 hard boiled eggs
- 2 romaine lettuce hearts
- 4 scallions
- 4 ounces best quality blue cheese
- 1 ripe avocado
- Tessemae’s Avocado Ranch, for serving
WHAT YOU DO
- Place bacon on a foil lined rimmed baking sheet and place in cold oven. Heat oven to 375F. Bacon will begin to cook while oven preheats. Cook until browned and crisp, about 15-20 minutes depending on how long your oven takes to heat.
- While bacon cooks, prep the other components of the salad. Pull the meat from the rotisserie chicken, chop the eggs, chop and rinse romaine, slice the scallions, crumble the blue cheese and dice your avocado.
- Drain bacon on paper towels, then crumble.
- Arrange all components in a large bowl. Add Avocado Ranch and toss. Serve immediately.
