Keep it simple stupid! Summer is the perfect time for this food mantra. When you have perfect Summer tomatoes and peaches, just enjoy them! We tossed them with a little Balsamic and fresh mint and they made a grilled chicken breast seem like an indulgent feast.
You can't get much easier than this 4th of July main dish. Marinate the chicken; then grill. We love using drumsticks, legs, and halved bone in breasts and letting everyone dig in with their hands.
