Caprese Pasta Salad
Prepare to put this vibrant pasta salad on repeat this summer. Juicy cherry tomatoes, fresh mozzarella pearls, fresh basil, and Lemon Garlic dressing come together to create this fresh and flavorful Caprese Pasta Salad.
MAKES 8 SERVINGS
WHAT YOU NEED
12 ounces Orecchiette
1 pint cherry tomatoes, halved
8 ounces fresh mozzarella pearls or bocconcini
3/4 cup Tessemae's Lemon Garlic
¼ cup toasted pine nuts
Coarse salt and fresh ground pepper
1/2 cup fresh basil leaves, gently torn
1 whole lemon
WHAT YOU DO
- Cook pasta according to package instructions. Rinse under cold water and drain well.
- In a large bowl combine pasta, tomatoes, mozzarella, ½ cup Lemon Garlic, and pine nuts. Season generously with salt and pepper. (If making ahead, refrigerate at this point, up to overnight.)
- Just before serving, zest the lemon over the pasta salad and stir in the basil, and remaining ¼ cup Lemon Garlic. Adjust seasoning with salt and pepper and if needed, some fresh lemon juice.
