This classic app gets an awesome update by basting with our BBQ. We also pre cook the bacon, so you have perfectly cooked scallops and crisp bacon every time.

6 slices bacon
12 large scallops
¼ cup Tessemae’s Matty’s BBQ Sauce
First, you need to pre cook the bacon. Heat a large skillet over medium low, add the bacon and cook until the fat is mostly rendered, but the bacon is still very soft. Transfer to a paper towel lined plate and let cool. (See Step Shot Below.)
 Wrap each scallop in a slice of bacon, rolling it around the outside edge. Secure it with a toothpick. Brush the scallop and the bacon with BBQ Sauce. Arrange the scallops on a foil lined baking sheet, scallop side up.

Heat your broiler to high. Set the rack 6 inches from the heat. (If you cannot move your rack, just turn more frequently.) This is not the recipe to set a timer and leave! The cooking time is going to vary depending on your broiler and on the size of your scallops. You are looking for these endpoints: crispy browned bacon and firm, white scallops. Broil, keeping a close eye, until one side is browned. Turn all the scallops over and broil the other side.

Serve the scallops hot, with extra BBQ sauce on the side.
