This time of year is C-R-A-Z-Y! Save yourself some time and effort by using cooked Rotisserie chicken in this easy salad. Dinner is D-O-N-E.
What you need
1 rotisserie chicken
5 ounces baby spinach
1 English cucumber, halved and sliced
½ cup sliced almonds
4 ounces fresh goat cheese, crumbled
½ cup Tessemae’s Raspberry Vinaigrette
What to do
Shred the chicken, discarding the skin and bones. Toss the meat with the spinach, cucumber, and almonds. Top the salad with the goat cheese and drizzle with Raspberry Vinaigrette.
