Chicken Pot Pie
By popular demand, here is our version of the comfort food classic. It's full of veggies, chicken and yummy goodness! Our filling is dairy free, using the traditional rich chicken stock in place of milk or cream. We even included a paleo variation. Happy Fall!
Crispy Chicken with Apples and Shallots
Our favorite thing about this one pan meal is that the apples form a rack for the chicken. This means that 1) the chicken skin can get nice and crisp and 2) the rendering chicken fat coats the apples and shallots. With almost no prep, the 45 min cook time is worth the wait.

Eating apples this time of year reminds us why eating seasonally is the way to do it. They are juicy, crisp, concentrated, sweet, tart, and never mealy. We're all eating a minimum 2 apples a day as long as they are around!!! Here's #1.
