Balsamic Couscous with Tomato & Feta
This easy side dish is chock-full of Summer veggies and our Pantry Classic Balsamic makes it drool worthy! We tested this two ways: with cauliflower rice and with pearled couscous - both were delicious!
Makes 8 servings
What you need
2 cups pearled couscous or 4 cups cauliflower rice6 Persian cucumbers, halved and cut into ½ inch pieces
1 pint mixed grape tomatoes, halved
4 scallions, thinly sliced
½ cup walnut pieces
8 ounces feta cheese, diced
½ cup Tessemae’s Pantry Classic Balsamic
¼ cup fresh mint leaves, roughly chopped
What you do
- If using pearled couscous, cook according to package. Spread over a sheet pan to cool and set aside. If using cauliflower rice, steam, then spread over a sheet pan to cool.
- Meanwhile, dice and chop all of the veggies.
- Assemble salad combine by tossing all ingredients in a large bowl. Chill until ready to serve. Toss in more Balsamic just before serving.
