Grilled Shrimp & Nectarine Salad with Lemon Garlic
As the weather heats up, so do our grills! Recipes that are light, bright and nutritious are key for those steamy summer nights! Savory shrimp, sweet nectarines and salty feta for the win! All drizzled with our Lemon Garlic to bring it together.
MAKES 4 SERVINGS
What you need
-
1 ½ pounds large peeled and deveined shrim p -
½ cup Tessemae’s Lemon Garlic -
2 tomato es, cut into wedges -
3 nectarines, cut into wedges -
¼ cup pitted green olives , halved -
½ cup f resh mint leaves 1, 8 ounce block feta cheese -
2 pita bre a d or naan
What you do
- If using wooden skewers, submerge them in water for at least 30 min before grilling.

Toss the shrimp with 2 tablespoons Lemon Garlic and Season with salt and pepper . Let marinate at least 5 minutes and up to 30 minutes. -
On serving platter or in individual bowls, arrange the tomatoes, nectarines, olives, mint, and feta. -
Heat grill to high. T hread shrimp onto skewers . Grill skewers until shrimp are just cooked t hrough, 1 to 2 minutes per side. Brush naan with more Lemon Garlic and grill until warmed through, 1 minute per side . - Add shrimp and pita to platter and serve, drizzled with more Lemon Garlic.
