Poached Salmon with Green Goddess
STOP! Keep reading! Poaching is not hard or fancy. Come on, if it was would we ever post it? Thank you. Poaching is a super easy way to add awesome flavor to fish. It also keeps it tender and super juicy. Add Green Goddess? Done.
What you need
1 lemon, sliced
4 garlic cloves, smashed
6 tablespoons Tessemae’s Green Goddess
4 skinless salmon filets (about 6 ounces each)
coarse salt
What to do
Add 2 inches of water to a large pot or straight sided skillet. (You need just enough to cover the salmon.) Add the lemon, garlic cloves and 2 tablespoons of the Green Goddess. Bring to a simmer and cook 5 minutes to infuse the flavors.
Season the salmon fillets with salt. Lower them into the simmering liquid, reduce to a very low simmer and cover. Cook until just cooked through, about 5 minutes. Transfer the salmon to a paper towel lined plate with a fish spatula, or tongs and a spatula.
Serve the salmon warm or, refrigerate and serve cold. Either way, drizzle it with plenty more Green Goddess. We ate it warm, with crisp Bibb lettuce roasted new potatoes. (Toss the potatoes with Cracked Pepper and roast at 450F until browned and tender.)
