Zesty Minted Peas
London is calling! Ok, not really. But mushy peas ARE a staple comfort food next to Fish & Chips in England. Give this 5 minute recipe a try this Spring!
What you need
4 tablespoons Tessemae’s Zesty Ranch
1 small shallot, minced
1 pound fresh or frozen peas
¼ cup fresh mint leaves, roughly chopped
coarse salt and ground pepper
What to do
Heat the Zesty Ranch in a small saucepan over medium. Add the shallots and peas. If using fresh peas, add ¼ cup water, cover and let steam a couple minutes. If using frozen peas, just toss until warmed through.
Stir in the mint until it wilts and mash with a potato masher. (You can use a food processor if you want a smoother puree.) Season with salt and pepper and stir in a 2 more tablespoons of the Zesty Ranch.
