Everyone is in the homemade baked bread spirit! This Pea & Goat Cheese Toasts recipe is an easy way to take your fresh bread to the next level using fresh or frozen peas and any spreadable cheese you have on hand.
Makes 4 servings
1 pound fresh or frozen peas
2 garlic cloves
juice of 1 lemon
1/4 cup parsley
1⁄2 cup Tessemae’s Lemon Pepper
4 ounces fresh goat cheese, ricotta, or any other soft and spreadable cheese
4 -8 slices bread, depending on size
ground pepper or pepper flakes, for serving
If using fresh peas, start by blanching them in boiling water. Transfer to an ice bath. If using frozen peas, simply thaw the peas by running the, under lukewarm water.
In a food processor, combine the peas, garlic, lemon juice, and parsley Season with salt and pepper and puree until chopped. With the motor running, drizzle in the Lemon Pepper. Blend until creamy.
Toast your bread, spread with cheese, then spoon the pea puree over top.
