Za'atar & Lemon Grilled Chicken Thighs
Fire up the grill with the zing of Za'atar - a Mediterranean blend of oregano, thyme, cumin, and sesame seeds. Our Pantry Lemon Pepper is the perfect base for this flavor bomb of a marinade. Just mix together a few dry spices, season and grill!

1 tablespoon dried thyme
1 tablespoon ground cumin
1 tablespoon sesame seeds
1 tablespoon kosher salt
1 tablespoon sumac (optional)

For the Zaatar Seasoning:
1 tablespoon dried oregano1 tablespoon dried thyme
1 tablespoon ground cumin
1 tablespoon sesame seeds
1 tablespoon kosher salt
1 tablespoon sumac (optional)
For the Chicken:
16 boneless, skinless chicken thighs (about 3 pounds)
1/4 cup Tessemae’s Pantry Lemon Pepper
4 fresh oregano sprigs
2 lemons, halved
What to do:
- Make Zaatar: Combine all ingredients in a small bow.
- Pour the Lemon Pepper into a 9x13 baking dish. Add the chicken, turning to coat. Sprinkle each piece of chicken on both sides with Zaatar seasoning. Add the fresh oregano sprigs and cover. Refrigerate at least 15 minutes and up to 1 day.
- Heat your grill to medium-high. Grill chicken until cooked through, turning over once, about 5 minutes on each side. Place lemon halves on the grill and cook until charred.
- Transfer chicken to a cutting board or plate and squeeze grilled lemons over top before serving.
