What you need
1 teaspoon oil
1 handful baby kale or chopped kale
½ avocado, diced
2 large eggs, beaten
coarse salt and fresh ground pepper
Tessemae’s Hot Sauce, fresh OJ and whole grain toast, for serving
What to do
Heat the oil in a small nonstick pan. Throw in the kale, avocado, and eggs. Stir with a rubber spatula until the eggs are scrambled and kale is wilted. Sprinkle with salt and pepper and eat with plenty of Hot Sauce, OJ, and toast.
