Smoked Salmon and Spinach Scramble
You may have heard that the Tessemae's team has been doing a Whole 30 this month to reset and balance. So, we have all been eating a lot of eggs for breakfast! Until about halfway through, I forgot all about smoked salmon! This scramble is a perfect complement to a few smokey slices and makes breakfast a little special.
What you need
1 tablespoon Tessemae’s Lemon Garlic
1 scallion, thinly sliced
2 large eggs, beaten
1 cup baby spinach
2 ounces sliced smoked salmon
What to do
In a small, nonstick skillet heat the Lemon Garlic over medium. Add the scallion and stir until tender, about 1 minute. Stir in the eggs and the spinach and cook, stirring, until the spinach is wilted and the egg is set. About 2 minutes. Serve with the smoked salmon and more Lemon Garlic.
Tip: This recipe is easily doubled to serve 2!
