It’s that simple. For best quality, keep all Tessemae’s products refrigerated from the time you buy them, until you drink down every last drop. We know that refrigeration keeps our products at their best and will make them last the longest. It’s science people.
So why the confusion? Well here’s the whole truth. To make sure our products are safe and comply with all US safety regulations, we get them professionally tested by a third party. That’s right! It’s called a “shelf life study.” Our studies tell us that it is completely safe to keep most Tesse dressings out of the fridge a whole 30 days. (The original Tesse Mae always kept her famous Lemon Garlic out of the fridge, and all three boys have survived into adulthood, but then again… she also made Greg play the trumpet, so use your own judgment!)
We pride ourselves on using fresh ingredients and no artificial preservatives. This means that some dressings and sauces, especially our Raz Vin (we puree fresh raspberries for it!) should really always be in the fridge.
That’s the full story and we are definitely sticking to it. So do us all a favor and keep your sauce in the fridge. If that natural, beautiful, olive oil seizes up on you, just run it under some warm water, or leave it out on the counter for a bit before you pour it on.
