Guac & Plantain Chips
Oh wait... did you think you had the world's best guac recipe? Well, stir in Southwest Ranch and see what happens. We dare you.
What you need
For the Chips:
2 green plantains (about 1 pound)
2 tablespoons Tessemae’s Southwest Ranch Dressing
coarse salt
For the Guac:
½ cup finely chopped yellow onion
½ - 1 jalapeno pepper, minced
3 tablespoons fresh lime juice
coarse salt
2 ripe avocados
2 tablespoons Tessemae’s Southwest Ranch Dressing
¼ cup chopped cilantro
What to do
Heat your oven to 400. Peel and very thinly slice the plantains on the diagonal, using a mandolin, Japanese mandolin, or one of those handy slicers you can generally get in the grocery store these days. Toss them with the Southwest Ranch on a rimmed baking sheet, then divide between 2 sheets so they are in a single layer. Bake until crisp and just beginning to brown, 8- 12 minutes. (The thicker the chips, the longer the cooking time!)
In a mixing bowl, combine the onion, jalapeno, lime juice, and a big pinch of salt. Let stand about 5 minutes. Mash in the avocado, 1 tablespoon Southwest Ranch, and cilantro. Spoon into a serving bowl and serve with the plantain chips and more Southwest Ranch.
