Balsamic Chicken with Tomatoes & Peaches
Keep it simple stupid! Summer is the perfect time for this food mantra. When you have perfect Summer tomatoes and peaches, just enjoy them! We tossed them with a little Balsamic and fresh mint and they made a grilled chicken breast seem like an indulgent feast.
Serves 4
What you need
4 boneless, skinless chicken breasts (6-8 ounces each)½ cup Tessemae’s Balsamic
coarse salt and ground pepper
3 ripe tomatoes, cut into wedges
3 ripe peaches, cut into wedges
1 small bunch fresh mint
What to do
- Place the chicken in a dish and coat with ¼ cup Balsamic. Season with salt and pepper. Let marinate at least 30 minutes and up to overnight.
- Heat your grill or grill pan to high. Season the chicken with salt and pepper. Grill until cooked through, 5-6 minutes per side. Let the chicken rest.
- Toss the peaches, tomatoes, and mint leaves with ¼ cup balsamic and gently toss. Serve the salad alongside the grilled chicken.
