It may be back to School Season, but the last long weekend of Summer is right around the corner! This cool and creamy salad is perfect for your Labor Day BBQ. But... if you just can't wait to make it, serve with just about any grilled meat for a fast weeknight meal.
What you need
2 English cucumbers, halved, seeded, sliced 12 inch on a bias
2 whole avocados, halved, pitted, cut into large chunks
4 scallions, sliced crosswise
¼ cup fresh dill
coarse salt and ground pepper
1/3 cup Tessemae’s Creamy Ranch
What to do
Just before serving: Arrange the cucumber and avocado on a platter. Scatter the scallions and dill on top and drizzle with Ranch.
