Turkey & Avocado Egg Wraps
These tasty wraps are packed with protein! Don't be afraid of having to flip the egg, our cooking method is fool proof! Mix it up with your favorite meat and veggies, and of course your fav Tesse condiments. Perfect for lunch!
What you need
4 large eggs
2 minced scallion
2 tablespoons Tessemae’s Lemon Garlic
6 slices best quality deli turkey
½ avocado avocado
½ cup chopped greens
Tessemae’s Ketchup, for serving
What to do
- In a small bowl beat the eggs and the scallions.
- Heat 1 tablespoon Lemon Garlic in a large non-stick skillet over medium heat. Add the egg and swirl to coat the pan. Shake the pan gently as the egg sets to make sure it is not sticking. Once the egg is mostly set but still wet on top, reduce the heat to low and cover for 30 seconds, or until the egg is cooked through.
- Slide the egg onto a cutting board. Layer the half of the turkey around the egg to cover. Line the half of the avocado and then half of the greens down the center. Roll up to make a wrap.
- Repeat with remaining ingredients for a second wrap. Slice wraps in half and serve with ketchup.
Tip: These wraps can be refrigerated up to a day to pack for lunch!
