What you need
2/3 cup Tessemae’s Sesame Ginger 1/2 cup creamy peanut OR almond butter ¼ cup rice vinegar 8 ounces thin rice noodles 1/2 seedless cucumber 2 cups cooked, shredded chicken 1 cup carrot matchsticks
What you do
Stir together Sesame Ginger, nut butter and vinegar; set aside.
Place noodles in a large bowl and cover with hot tap water. Soak them until soft, about 20 minutes. Drain noodles very well and place in a serving bowl.
Use a vegetable peeler to make long strips of cucumber and add cucumber, chicken and carrots to serving bowl. Drizzle with sesame ginger mixture and serve.
