Makes about 2 cups
What you need
1 ripe avocado
1 lemon, zested and juiced
3 tablespoons chopped mint
½ cup Tessemae’s Mayonnaise
½ English cucumber, peeled and chopped
coarse salt and freshly ground black pepper
assorted raw vegetables, such as baby cucumbers, asparagus, carrots, cherry tomatoes
What you do
- Combine avocado, lemon zest and juice, mint, Mayonnaise, and cucumber in the bowl of a food processor. Pulse until smooth, scraping down sides as necessary. Season to taste with salt and pepper.
- Serve alongside assorted veggies
