You wont miss the bagel for one second with all the goodness in these platters! Smoked salmon, red onion, eggs, and of course our Everything Bagel Ranch to top it all off. This makes a lovely brunch... but we also love these flavors as a breakfast for dinner!
Makes 4 servings
What you need
1 large sweet potato, cut lengthwise into ¼ inch slices
1 tablespoon Tessemae’s Lemon Garlic
8 ounces smoked salmon
1 bunch flat leaf spinach
½ red onion, finely chopped
1 tablespoon ghee
8 large eggs, beaten
½ cup Tablespoons Everything Bagel Ranch
What you do
- Heat you oven to 375. Line a large rimmed baking sheet with parchment paper. Arrange sweet potatoes on the prepared sheets and run with Lemon garlic. Season with salt and pepper. Bake until tender, flipping over halfway through, about 15 minutes.
- Arrange sweet potato slices, salmon, spinach and onion on a plate or platter.
- Heat ghee in a large nonstick skillet over medium high. Add eggs and reduce heat to medium. Scramble eggs with a rubber spatula until they reach desired doneness.
- Add eggs to the platter and serve with plenty of Everything Bagel Ranch.
