Our Everything Bagel Ranch makes these simple bacon and egg breakfast bowls awesome enough for the holidays! (You don't have to tell the family they are Whole30 Approved and Keto friendly!)

What you need
12 slices of bacon
1 pint grape tomatoes
coarse salt and freshly ground black pepper
2 tablespoons Tessemae’s Lemon Garlic
4 large eggs
4 cup cauliflower rice
5 oz baby spinach
2 avocados , halved and sliced
4 tablespoons Tessemae’s Everything Bagel Ranch
What you do
- Heat your oven to 375 F. Line 2 large rimmed baking sheets with foil or parchment. Arrange bacon on one pan. On the other, toss tomatoes with 1 tablespoon Lemon Garlic and season with salt and pepper. Cook bacon until crisp, about 15 minutes. Cook tomatoes until blistered, about 30 minutes.
- Meanwhile, bring a large saucepan of water to a boil; reduce heat to medium high. Carefully lower eggs into the boiling water and cook for 6 minutes 30 seconds. Immediately transfer eggs to a bowl of ice water; set aside.
- In a large skillet over medium heat, heat another tablespoon Lemon Garlic. Add the cauliflower rice and spinach and cook until warm and wilted. Season with salt and pepper.
- Assemble bowls with cauliflower rice and spinach, bacon, roasted tomatoes, soft boiled eggs and spinach in a bowl. Drizzle with Everything Bagel Ranch and serve!
