The perfect little bite of juicy shrimp, rich avocado and a kick from our one and only Habanero Ranch!
Makes about 32
What you need
1 pound peeled and deveined large shrimp (31/35)
Coarse salt and freshly ground pepper
2 tablespoons Tessemae’s Lemon Garlic
5 ripe avocados
1 lemon, juiced
¼ cup Tessemae’s Habanero Ranch
2 English cucumbers, cut in slices (1/4 - 1/2 inch thick)
½ cup micro greens
What you do
- Season shrimp with salt and pepper. Heat Lemon Garlic in a large skillet over medium high. Add shrimp and cook until browned on one side. Flip over and cook until opaque throughout. About 3 minutes total. (You may need to cook the shrimp in 2 batches.)
- In a mixing bowl, mash the avocado with lemon juice and Habanero Ranch. Season with salt and pepper.
- Assemble bites on cucumber slices by layering the avocado mash, shrimp, and micro greens. Serve with more Habanero Ranch.
