You heard me. Rich, decadent, unbelievably paleo brownies. You only need 1 bowl, and to believe. If you want to scale back on the deliciousness, subtract the chocolate chips, these guys are yummy enough to withstand it. Serve these little gems alongside cantaloupe & lime wedges and dig in.
Makes 16 servings
What you need
1 1/2 cups shredded zucchini, squeezed of excess water
3/4 cup almond butter
1/3 cup honey
¼ cup Tessemae’s Mayonnaise
3 tablespoons cocoa powder
2 teaspoons vanilla extract
1 teaspoon baking powder
1 cup dark chocolate chips
½ cup chopped walnuts
1 cantaloupe, cut into wedges, for serving
1 lime, cut into wedges, for serving
What you do
- Heat oven to 350. Line a 8 x 8-inch baking pan with nonstick aluminum foil.
- Combine all ingredients in a mixing bowl and stir until well very blended.
- Pour batter into prepared pan and bake at 350 for about 45 minutes or until toothpick inserted in the center tests clean.
- Let cool completely before cutting into squares and serving.
