WHAT YOU NEED
1 leak, sliced
2 heads broccoli, cut into florets
2 cups spinach
1/2 cup fresh basil leaves
2 tablespoons Tessemae’s Lemon Pepper
, plus more for serving
salt and pepper
WHAT YOU DO
- Bring a large pot of salted water to a boil. Have a bowl of ice water ready alongside. In small batches, blanch broccoli in boiling water until bright green, about 30 seconds. Immediately transfer to ice bath. Repeat with all broccoli. Reserve cooking water.
- In a large heavy pot or dutch oven, heat Lemon Pepper over medium- low. Add leaks and spinach and cook until softened. Add basil and broccoli and stir to coat. Add about 2 cups of cooking liquid from the broccoli.
- Puree soup until smooth using an immersion blender (or transfer in batches to a large blender.) Adjust consistence with more broccoli cooking liquid. Season with salt and pepper and serve drizzed with more Lemon Pepper
