This veggie forward sandwich is perfect for a light meatless dinner, or as a make ahead lunch! Our Habanero Mayo adds creamy goodness and a big kick of spice.
Makes 2 sandwiches
4 slices sourdough bread, or any bread of your choice
4 tablespoons Tessemae’s Habanero Mayo
1 ball mozzarella, sliced
½ cup fresh basil leaves
½ cup fresh dill
1 cup fresh spinach
1 avocado, halved and sliced
2 Persian cucumbers, thinly sliced with a mandolin or vegetable peeler
1 zucchini, thinly sliced with a mandolin or vegetable peeler
coarse salt and fresh ground pepper
To Assemble sandwiches: lay all bread flat on your work surface and spread generously with Habanero Mayo. Stack 2 slices of bread with mozzarella, basil, dill, spinach, avocado, cucumber, and zucchini. As you stack, season the cheese and veggies lightly with salt and pepper. Top with remaining bread and enjoy.
