Instant Pot Pulled Pork Tenderloin
This tender pork recipe is easy enough for a weeknight thanks to our buddy the Instant Pot! We typically use pork shoulder for braises because it's high fat content, but we were blown away by how moist and juicy this recipe turned out! use it for sliders, wraps or tacos. It's super versatile!
Makes 6 servings
What you need
2 pork tenderloins (about 2.5 pounds total)1 tablespoon apple cider vinegar
1 onion, thinly sliced
1 red bell peppers seeded and thinly sliced
4 garlic cloves, sliced
coarse salt and freshly ground black pepper
1 cup Tessemae’s BBQ
2 cups shredded purple cabbage
¼ cup chopped cilantro
¼ cup Tessemae’s Honey Poppyseed
1 cup diced pineapple
Lettuce leaves or whole wheat slider buns
What you do
- Cut each pork tenderloin crosswise into 3 pieces. You will have 6 total.
- Pour 1/2 cup water and cider vinegar into bottom of Instant Pot insert. Add onions, peppers, garlic and pork to insert. Season with salt and pepper. Spread BBQ over the pork.
- Cover and lock lid, then press the “Clear/Off” button before pressing “Manual” and hold down the “+“ button until time increases to 35 minutes high pressure.
- While the pork cooks, toss together the cabbage, cilantro and Honey Poppyseed.
- Once cooking has competed, allow pressure to come down naturally for 10 minutes, then release steam manually. Remove pork to a bowl and shred with two forks.
- Serve pork on lettuce leaves or rolls with slaw and pineapple.
