Makes 4 servings
What you need
4 thick, bone-in pork chops (1 ½ inches thick, about 10 ounces each)
coarse salt and freshly ground black pepper
¼ cup Tessemae’s Balsamic dressing
½ of a honeydew melon, finely chopped
¼ cup chopped cilantro plus additional leaves
½ of a small red onion, finely chopped
1 lime, zested and juiced
What you do
- Heat grill to medium. Brush pork chops with 2 tablespoons Balsamic and sprinkle with salt and pepper, then place on the grill. Grill until just cooked through, about 6-8 minutes per side. Remove from grill and brush with another tablespoon of Balsamic.
- While pork is grilling, stir together remaining 1 tablespoon Balsamic, melon, cilantro, red onion, lime juice and zest and salt and pepper to taste. Serve salsa with pork chops.
