Lookin for healthy fats?? These Avocado Boats are a keto dream! Salmon, Avocado and our Creamy Ranch mixed with just the right blend of seasoning. We like them as a light summer dinner, lunch, or serve 1/2 each as a app at your next dinner party.
What you need
12 ounces salmon filet
Coarse salt and freshly ground pepper
3 tablespoons Tessemae’s Creamy Ranch
2 tablespoons capers
¼ cup chopped parsley
4 ripe avocados
What to do
- Heat your broiler to high. Season the salmon with salt and pepper. Broil the salmon until just cooked through, 8 to 10 minutes. Let cool to room temperature or refrigerate up to 1 day.
- Flake the salmon into large pieces and place in a mixing bowl. Add the Creamy Ranch, capers, scallions and parsley.
- To serve: Halve the avocados. Spoon salmon mixture into the center and drizzle with more Creamy Ranch.
