Farro & Crisp Apple Salad
Eating apples this time of year reminds us why eating seasonally is the way to do it. They are juicy, crisp, concentrated, sweet, tart, and never mealy. We're all eating a minimum 2 apples a day as long as they are around!!! Here's #1.
Serves 4
What you need
1 cup farro
coarse salt and freshly ground pepper
2 apples, cored and diced
¼ red onion, minced
½ cup Tessemae's Cracked Pepper
¼ cup fresh mint leaves
¼ cup pine nuts
½ cup crumbled feta cheese, optional
What to do
- Prepare the farro according to package instructions. Or, combine 1 cup farro and 3 cups water in a small saucepan. Season with salt and pepper and bring to a boil. Reduce heat, cover and simmer until the farro is tender but still chewy, about 15 minutes. Drain and place in a bowl to cool slightly.
- While the farro cooks cooks, combine the apples, onion, and cracked pepper. Stir in the faro, mint, pine nuts and feta.
