Balsamic Roasted Salmon & Grapes
Serve your sweetheart a delicious dish that is also kind to their heart! Nutrient dense salmon and flavorful red grapes are roasted to intensify their sweetness. What you need
- ½ pound seedless red grapes
- 2 shallots, quartered
- 4 sprigs fresh rosemary and or thyme, plus more for garnish
- 4 tablespoons Tessemae's Pantry Classic Balsamic
- Coarse salt and freshly ground pepper
- 2, 6-ounce salmon filets
- 2 cups baby arugula
What you do
- Heat your oven to 425. Separate the grapes from the large stems, into small bunches.
- On a large, rimmed baking sheet, toss the grapes, shallots and rosemary with 2 tablespoons Classic Balsamic. Season the mixture with salt and pepper and push to the sides of the pan.
- Arrange the fish in the center of the pan and season with salt and pepper. Drizzle with another tablespoons Classic Balsamic.
- Roast until the fish is just cooked through and the shallots are tender, 15 to 20 minutes.
- Serve fish and grapes over arugula, drizzled with more Classic Balsamic.
