This salad will forever change the way you think about Brussels sprouts. Be sure to save extra time by buying pre-sliced sprouts—many grocery stores sell them this way, thanks goodness!
Makes 8 servings
What you need
2 ½ pounds Brussels sprouts, very thinly sliced
1 1/2 cups chopped walnuts, toasted
2 ounces aged goat cheese, shaved with a vegetable peeler (optional)
2/3 cup Tessemae’s Green Goddess
coarse salt and freshly ground black pepper
What you do
Combine all ingredients in a serving bowl and season to taste with salt and pepper; toss until well blended. Let sit for 30 minutes to let leaves wilt slightly, then serve immediately.
