Savory Sausage Breakfast Casserole
Casseroles are great because you get to whip up the ingredients throw it in a dish and and sit back and relax while the incredible scents fill your home with warm and cozy aromas!
Makes 8 servings
What You Need

1 pound ounces bulk breakfast sausage
- 1 shallot, minced

5 ounces sliced cremini mushrooms

5 ounces baby spinach, plus more for serving

12 large eggs

1 cups half and half or full fat coconut milk

¼ cup Tessemae’s Avocado Ranch
- 4 ounces Gruyere cheese, grated (optional)
What You Do
- Preheat oven to 350 degrees. Butter a 3 quart baking dish. In a large skillet, brown sausage add shallot and mushrooms and cook until softened, about 5 minutes.
- Add as much spinach to skillet as will fit; season with salt and pepper, and toss, adding more spinach as room becomes available, until wilted.
- Spread the mixture in the prepared baking dish. Sprinkle ¾ cheese over the spinach.
- In a large bowl, whisk together eggs, half and half, and Avocado Ranch. Season with salt and pepper. Pour into dish. Place on a large rimmed baking sheet.
- Bake until center is just set, 45 to 50 minutes, sprinkle with the rest of cheese and bake until melted, about 5 minutes more.
