This one pan meal is so delicious, you would never know it comes together in less than 30 minutes! Heart healthy salmon, broccoli, and our bright and tangy Green Goddess dressing. Yum!
Makes 4 servings
2 bunches broccolini, ends trimmed
3 tablespoons Tessemae’s Green Goddess
coarse salt and freshly ground pepper
4, 6 ounce salmon filets
1 lemon, thinly sliced
¼ cup chopped parsley leaves
¼ cup chopped walnuts
- Preheat oven to 425 degrees. Toss the broccolini and 2 tablespoons Green Goddess on a large rimmed baking sheet and season with salt and pepper.
- Push to the sides and arrange the fish on top, drizzle with the remaining tablespoon Green Goddess and season with salt and pepper. Place 2 lemon slice on each piece of fish.
- Roast until the fish is just cooked through and the broccolini is tender, 15 to 20 minutes.
- Scatter the parsley and walnuts over the fish and serve immediately.
