This Greek Salad recipe is simply the best! It's quick, easy and delicious. It features marinated chicken, colorful vegetables, feta cheese and Classic Greek Vinaigrette.

WHAT YOU NEED
1 ½ pound chicken tenderloins
½ cup Tessemae's Classic Greek Vinaigrette
1 English cucumber, seeded and diced
1 pint mixed grape tomatoes, halved
½ red onion, thinly sliced
½ cup kalamata olives
½ cup pepperoncini
1, 8 ounce block feta cheese, sliced into planks
½ cup fresh mint leaves
Pita chips, for serving optional
WHAT YOU DO
- Combine chicken and ¼ cup Greek Vinaigrette. Marinate at least 10 minutes and up to 2 hours.
- Grill chicken over medium high until cooked through, about 3 minutes per side.
- On serving platter or in individual bowls, arrange the cucumber, tomatoes, onion, olives, pepperoncini and feta. Top with chicken and torn mint. Drizzle with more Greek vinaigrette. Serve with pita chips.
