Tomato, Avocado & Watermelon Platter with Bacon Pesto
This salad is Summer on a platter! Wait until you try our bacon pesto! It adds just the right savory flavor to amp up the delicious fruit and veggies.
Makes 8 servings
What you need
For the Pesto:
3 cups fresh basil leaves (2 ounces)
¼ cup blanched almonds
¼ cup grated parmesan
6 slices crisp cooked bacon, chopped
1 tablespoon Tessemae’s Slow Roasted Garlic
coarse salt and ground pepper
3/4 cup Tessemaes Lemon Garlic
For the Platter:
1 bunch asparagus, trimmed
1 large ripe tomato, sliced
1 pint cherry tomatoes, halved
2 ripe avocado, halved, pitted and sliced
1 English cucumber, sliced
¼ seedless watermelon, cut into slices
What you do
- In a food processor, combine the basil, almonds, parmesan, bacon, and Slow Roasted Garlic. Process until everything is finely chopped. With the motor running, add the Lemon Garlic and process until smooth.
- Heat grill pan or grill to medium high. Toss asparagus with a drizzle of Lemon Garlic, salt and pepper. Grill until just tender, about 3 minutes.
- Arrange the asparagus, tomatoes, avocado, cucumber , and watermelon on a platter. Serve with the pesto and garnish with extra basil and bacon.
