Let's count the ways this salad is AMAZING. 1) Green Goddess. 2) Avocado. 3) Make ahead. Do you REALLY need more than that? Thought not.
What you need
2 cups diced cucumber (from ½ English cucumber)
1 avocado, diced
6 tablespoons Tessemae’s Green Goddess
1 cup diced cooked chicken or turkey (from 1 chicken breast)
2 tablespoons turkey or pork bacon bits* (optional)
2 eggs, hard cooked
3 ounces Stilton cheese, diced (optional)
1 head romaine or green leaf lettuce, sliced
What to do
- Assemble the salads in 2 wide mouth quart size mason jars.
- Layer in the cucumber and then avocado. Drizzle with Green Goddess to coat the avocado (this will help prevent it from browning).
- Top with the cooked chicken, bacon bits, eggs, cheese, and last romaine. Top with lids and refrigerate, up to 3 days.
- To serve, invert salads into bowls or plates and enjoy!
