What you need
12 ounces (3/4 box) Gamelli pasta, gluten free if desired
1 bottle Avocado Ranch dressing
2, 15 oz cans artichoke hearts, drained and chopped
1 cup roughly chopped baby spinach
1 bunch scallions, thinly sliced
1 cup crumbled feta cheese
What you do
- Cook pasta to al dente according to package instructions. Drain under cold water to stop the cooking.
- Combine pasta and Avocado Ranch dressing until coated. Fold in the artichokes, spinach, scallions and feta. Add more avocado ranch as desired.
